Yeah, economics are pretty complex. If everyone decided tomorrow to change from beef to any one alternative, that alternative would disappear from all shelves, come back way more expensive than it was, while the price of beef would trend towards zero until the low price brings people back to beef.

It might take a decade to spin up beef production, but they could slaughter the herds down to nearly nothing in a year. Especially once the agreements that allow free range beef to exploit wild lands become unpopular/unmaintained.
Probably becaise they’re somewhat substitutable goods. Price for beef goes up, more people buy pork.
