Does anyone have a potato buns recipe they like?

I’m looking to do a labour day cookout with some burgers, and I have some potatoes that are getting a bit old. Does anyone have a recipe for potato buns they like that I could try?

Chef John from foodwishes had a fantastic recipe, but it uses sweet potatoes.
