I’m not able to dedicate time to 5 gal batches anymore. I’m thinking about getting a hot plate and brewing 1 or 2 gals. Anyone tried that?

I’ve used one from IKEA that’s 2000W (TILREDA) for 10L batches. It’s just a cheap single-plate induction top, costs 45€, but it works perfectly fine.
That’s what I use with a 25 liter pot to boil about 22 liters of wort.
Yeah i use a tilreda for my mash. Works so well husband went and bought himself another dedicated one for the brewery
