Free chicken thighs went into this but after cooking it I’m convinced that they were completely unnecessary because the sun dried tomatoes did all the lifting here.

This is the recipe I worked from but instead of a slow cooker I did it as a one pot. Browned the chicken. Deglazeed with some stock, added the onions and deglazeed again after they were just barely going clear.

Then the garlic, carrots, seasoning, stock, and sun dried tomatoes, chicken powder went in. Simmer all that for as much time as you’ve got, minimum 30 minutes.

Add the potatoes, bring to a boil, reduce to simmer. Once they are not fully fork tender I added the beans and spinach. Once the spinach is wilted its serving time.

We talked about different versions for the future.
No chicken.
No chicken but yes mushrooms.
No chicken, potatoes or beans. I like this because it would be like an Italian miso soup with spinach instead of seaweed.

Pasta instead of potatoes for a more cold soup method.

You are going to want some bread. You gotta soak up the broth. If you don’t make some then store bought exists. It represents about 35¢ of the cost here because I made it in the morning.

Cost per person: $2.67.
Cost per person with the chicken: $3.65 This also took a lot of stock so add that in because I used homemade that I canned up with years ago from free turkey. Figure in buying bread and stock and realistically you are probably looking at closer to $5 a person.
