My pineapple is ~6 years old and hasn’t blossomed 😢
The only thing I noticed is that the size of the pot has a huge effect on its growth.
Apart from that, I have no idea what I’m doing right. It may be the sunny, south-facing window. I have harvested several pineapple fruits over the years. They seem to be absolutely unstoppable and unkillable and predictable in their growth here. They don’t care about seasons (it’s snowing!). The only time I managed to kill one is when I put the pot outside in summer - it went bad in just three days.

Yeah, I guess it’s the light. For years I did not have a good place for it, it is really huge with the leave crown…
Then it needs more light. Flower/ fruit formation requires lots of energy
I would like to have a pineapple plant just because I think they look neat and it’s cool that they grow such large fruits.
I don’t like pineapple though. Horrible, bitter taste.
I don’t think there’s anything bitter in pineapple at all. Either you’ve only had really bad pineapple, or maybe you’re allergic to it.
Fascinating that you find pineapple bitter.
I think the other commenter may have hit the nail on the head. The original commenter might be allergic to the enzyme that fresh pineapple releases that makes it hurt your mouth. That would probably taste bitter if it was not only trying to digest you back, but those digestive enzymes were also mildly to threateningly poisonous to you.
Kinda like how people taste cilantro, sweet corn, and basically every other foodstuff differently.
